I'm back! I know, who starts a blog then doesn't post for two weeks!? I'm sorry. I did, however learn a very valuable lesson, never start a blog about food the week before finals. Why? Here are three prime reasons:
- Lack of Time - Meals: The week right before finals, and finals week itself, causes mass anxiety. Primarily about the amount of time between studying for and taking finals. Preparing meals is not an option. That takes too much thought, prep, energy, and...time! Instead I consumed some very boring salads (literally lettuce and dressing...yum!), mixed nuts, apples (lots of apples), and popcorn. I could live off popcorn, that was what I ate the most of. My air-popper and I are best friends.
- Lack of Time - Blogging: During finals week there are already plenty of distractions on the internet: Facebook, Twitter, Pinterest, other random things people share. With those things though it's easy to just check or go on periodically (all except Pinterest, that is); with a blog you have to sit there and write something, something interesting and worth reading. And believe you me, I had so much writing going on that the idea of composing a post on here was nowhere near my radar.
- Nothing Happens: Had I been blogging, my stories would have been the same, every single day. Absolutely nothing interesting, or worth reading about, happens in those two weeks. I mean, let's see. I wrote five essays. I studied. I got frustrated at the stupid prompts my teachers assigned and bickered about it with my classmates. I went to work... Real exciting stuff, clearly.
Anyways, there you have it. Three great reasons why you can't be mad I was gone for so long! I was looking out for your best interest.
Here's the thing though. Since I have so much free time these days, I'm bound to have some recipes, restaurant reviews, stories, and possible crafts coming at you. So be on the look out for more post coming soon. And as Christmas rounds the corner (less than two weeks, no shopping done yet!) I'll be testing out some vegan holiday dishes.
Also, Mondays are going to be Music Mondays! I'm going to share a song that I'm loving at the moment or always love. If you happened to watch SNL this weekend you would have seen Robyn singing her hit song "Call Your Girlfriend" and while I do like her version of it, I'm obsessed with this cover:
