Trader Joe's & Sloppy Joes

Today, for the sake of my refrigerator, cabinets, and of course my stomach I went grocery shopping. The dreaded, daunting task that every college student must do; that every person must do. I looked through some recipes, got inspired, and knew it was now or never.


Trader Joe's, I love you. (I also picked up a few things from Fred Meyers) But look at all the stuff I got!

This is all the stuff I bought: 3 boxes of Silk Vanilla Soy, 5 bananas, 3 jars of Prego Veggie Smart, a 2-lb organic spagetti squash, a pound of green beans, Mission brand Artisan Corn and Whole Wheat Blend tortillas, a green pepper, Tofutti Cream Cheese, a container of raw peanut butter, Soy Chorizo, 8 Whole Wheat Buns, 3 hearts of Romain, a box of Imagine Tomato Soup, Red Mill TVP (textured vegetable protein), a bottle of bbq sauce, a box of Joe's O's, and a bag of slivered almonds.

All that stuff, $40. I have meals for the whole week (and then some) and enough leftovers to freeze for later! Tonight was no exception to leftovers.

Here's what I ate:

is that brown sugar oats with peppers?

Vegan Sloppy Joes
*this recipe was adapted from The Vegan Stoner.

what you'll need:
  • 1/2 of a green pepper, chopped
  • 1/3 of a onion sweet onion, chopped
  • 1 cup TVP (textured vegetable protein)
  • 1 cup water
  • 1/2 cup bbq sauce
  • salt and peper to taste
  • buns
what you'll do:
  • Bring water to a boil.
  • Stir in TVP for about a minute and remove from heat.
  • Add onion, pepper, and bbq sauce. Mix well. If desired, add salt and peper.
  • This step is completely optional- toast buns in toaster, or broil until buns as golden.
  • Place as much or as little sloppy joe on bun as desired. (I put about 1/2 cup on and it was good)

I have so much of this left over, probably enough for 5 more Sloppy Joes. I will maybe eat some later this week, but if not I will just toss it in the freezer like I did the buns. Doing this gives me a quick easy dinner for some other time; a busy collegiate's dream!
