I love Mexican food, so I was so happy to see this recipe on The Vegan Stoner. I've taken this super easy recipe and laid it out for measurements and made a few modifications.

Soy Chorizo Tacos
*this recipe was adapted from The Vegan Stoner.
what you'll need:
- Soy Chorizo (I got mine at Trader Joe's)
- scant 1/4 cup of onions
- sliced lettuce
- vegan cream cheese (just enough to smear on tortilla)
- multigrain tortillas
what you'll do:
- Cut chorizo into fourths. Remove casing from one piece and place in a pan over medium-low heat. As it beings to warm up, stir with a fork to break it apart.
- After about 5 minutes, or once it seems warm enough to eat, add onions. Continue to stir to incorporate flavors.
- Warm a tortilla in the microwave for about 15 seconds.
- Smear a bit of cream cheese on tortilla (more or less depending on personal taste).
- Add half of the cooked chorizo; top with lettuce.
Preparing a fourth of the chorizo at a time, allows for optimum portion control and a quick meal the following day. I normally enjoy a small salad with it, but I just bought some chips and salsa, so looks like I will be having a Mexican Vegan Feast tonight!
